I feel within myself that I’m so much more stronger. I’m smashing my weight training sessions and loving eveyr second of it. I’m on fire at the moment and life doesn’t get much better then this.

I caught the cooking bug this week and made this delicious tuna pasta bake. I’m normally not a big fan of tuna but boy, this is seriously moorish! Then on my fridge at home is a list of things I want to make, things like chicken fried rice, chilli con carne and a chow mien.

Oh and before I forget, I rushed out and bought the “80/20 Diet: 12 Weeks To A Better Body” book by Teresa Cutter. Teresa Cutter used to be a former competitor, and is now a qualified personal trainer and chef! I’m telling you guys you should seriously consider buying it, it’s a worthwhile investment. She’s not called the Healthy Chef for nothing you know.

Ingredients:
300ml Spring Water
1 Shot Organic Espresso Coffee
30gm Organic Rolled Oats
1 Tbsp Organic Golden Flaxseed Meal
1/2 Frozen Organic Banana
1tsp Organic Rapadura SugarMethod:
Soak water, coffee, oats, flaxseed and rapadura overnight in the fridge allowing the flavours time to infuse.
Add banana to it in the morning.
Use stabmixer to blend and serve.

How many of you really know or more importantly understand the whys and what fors when it comes to the meals you eat? I certainly was one of those people as ignorance was a bliss. But this year it’s all about self-educating myself so that I have a more thorough understanding. So in saying that, let me explain my breakfast smoothie. The Coles Organic Oats Traditional Rolled have a medium glycemic index of 59, they are slow digestion and absorption, produce gradual rises in blood sugar and insulin levels and have proven benefits for your health. They give me the energy that I need to get through my morning weight training sessions. The Banana is has a low glycemic index of 52, it’s also a good source of potassium. But why? Just what does it actually do for us? Nerves need it to tell muscles what to do and muscles need it to do what they’re told. It helps keep our body’s fluids in balance and regulate our blood pressure. Here are some quick facts that you might find interesting:

1. Diets low in potassium and high in sodium may be one factor that leads to high blood pressure.
2. Eating equal amounts of sodium and potassium is recommended.
3. Athletes involved in hard exercise may require larger quantities of potassium-rich foods.
4. Potassium is found in meats, milk, fruits and vegetables.

I use water in lieu of no-fat milk because milk has a tendency to bloat me. Another reasons is that I have to watch my daily protein intake due to health reasons and you’d be amazed how quickly it can add up. Masterfoods Cinnamon Ground is a spice that compliments the banana. I just add a little pinch for the extra taste. Last but not least, Splenda No Calorie Sweetener, Granules reduces the calories and carbohydrates that pure sure adds. I just add a medium pinch for the extra taste. I hope you enjoyed my blog this morning because I certainly enjoyed typing it. I learnt a lot myself by looking information up on the internet. I still have so much more to lean which is the most exciting part of learning.

Have a wonderful day!

Ingredients:
Asian Vermicelli Rice Noodles
Iceberg Lettuce, Thinly Sliced
Continental Cucumber, Thinly Sliced
Carrot, Julienne
Bean Sprouts
Chopped Celery
Fresh Mint Leaves, Chopped
Prawns

Salad Dressing:
Fresh Lemon Juice
Fish Sauce
Palm Sugar or Splenda Granules
Sliced Fresh Chilli

Garnish:
Chopped Peanuts
Fried Shallots
Fried Garlic

My wonderful husband prepared this Prawn Vietnamese Salad for dinner this evening. We love all things Asian in this house. It’s a totally clean and healthy meal which I was in desperate need of after the xmas break. There are some variations depending on dietary requirements of course.

It’s incredible the difference it makes to the way you feel about yourself internally. Not only was it very nutritious but it satisfied my needs and I now feel healthier for it. Although I’m still craving sweet foods to satisfy that I had a piece of dried apple which did the trick. I just need to recognise that all these overwhelming cravings are due to recent indulgences. Once they pass through my system and are replaced with clean foods everything will return back to normal.

Have a great evening!

I’ve just finished a delicious bowl of my homemade muesli for breakfast. Here are the ingredients in case you’re interested. Breakfast is my absolute favourite meal of the day and the only one I couldn’t live without.

It’s now gone 2255h. Oops sorry, I got a little distracted there for a while with archiving and creating new files for my figure files. There’s not a day that I don’t go in there and work and update information and photos. You really have to to stay current and competitive in this sport. I’m going to wrap this up as I’m getting distracted yet again.

I’ve ended up not only spring cleaning my computer but also my office. There’s nothing like a damn good spring clean if you ask me. I also dressed my personal altar with a few summer adornments as it’s now the season. And last but not least I lit the oil burner and put some eucalyptus oil in it to cleanse the energy in this room.

I’m on a roll! I’ve also just finished spring cleaning the master bedroom en-suite (my bathroom). When I was preparing for and competing everything else took a back seat when it came to domestics. I had other priorities. Now that competition season is over I have the time and energy to catch up on everything. Not to mention finally finish unpacking, it’s been six months. Better late then never I say.

Well it’s almost 2100h. Time for me to freshen up before bed in an hours time. Another early start tomorrow, getting up at 0600h. Fingers crossed it’s a nice day as I plan to ride my bike to the gym. Good night.
