This Week’s Menu

Lamb Cutlets & Roast Vegetables
Breakfast
: Organic Scrambled Eggs, Shortcut Bacon & Tomato Salsa
Snack: Organic Strawberries
Lunch: Organic Lamb Cutlets & Roast Vegetables
Snack: Organic Walnuts
Dinner: BBQ Salmon with Lemon & Herbs and the Perfect Green Salad

What’s not to love about my menu for this week, it’s jam packed with nutritious varieties of fruit, salad, vegetables, nuts and lean sources of protein. And flavour, there’s plenty of that let me tell you. It’s taken me a long time to get to where I am now and although I’ll never be perfect as I had previously strived to be, I’m okay with that. Jacqui would always remind me that we don’t live in a perfect world so why are we killing ourselves trying to achieve perfection. Talk about unrealistic expectations that we’re placing on ourselves and she’s right. I may not eat the perfect bodybuilder’s diet but my health and well being is so much more important to me than ticking all the boxes. Like I was saying over on Lindy’s Forum, health and well being must come first and everything else comes second. Then and only then can you move forward towards your health and fitness goals and dreams.

With my weekly nutrition I ensure I take care of all my physical needs like I touched on last week. Then it’s time to take care of my taste buds to ensure there’s a variety of different flavours to keep me happy and prevent me from straying from my plan. This week’s inspiration came from Taste.com.au So there was no excuses for nothing coming up with something creative, healthy, delicious and visually pleasing for the week. If you have access to the internet and a kitchen, then you can create truly nutritious meals like this one that will make a difference to your future’s health and well being

Hey Lia…I was just wondering if anyone else was having problems getting into Lindy’s site…I keep getting strange error messages just trying to get onto the main home page at http://www.lindyolsen.com. Could be something with my computer I suppose-except that’s the only site I seem to have probs with. Anyway-just wondered if you knew anything about it!

*SIGH* I wish I could get to that point, I was eating perfectly once but got lost, cocky even and for years now I have tried to get back there, failing constantly. Maybe it is the support, I feel I am on my own, anyone else around me doesn`t understand (tells me to stop my barbie doll image) or is too weak to lift me where I fail(food it is all about food). I keep trying year after year to eat perfect again, and now my last goal is almost here, I have 6 months left to lose the bodyfat so I can finally see my six pack if only for a week or two without having to lean back suck it in and flex. Wish me luck…P.S. I have that book on the way from UK, low Gi diet cookbook, found it cheapest on ebay, I need some new ideas! :)

Christine it’s taken me years to get where I am today and I still have some way to go but I’m persistent and that’s what’s going to get me to where I need to go in the end. Life is seldom easy and will always continue to challenge us, it’s people like us that never give up that will make it not matter what the circumstances are. Best of luck with your journey, you can do this and will do this. xxx

Hi Lia!
Just dropping by to say hi! As you know, I’ve just moved up here to Darwin, and I had to leave you a comment as I know you are in the RAAF. I’m actually doing some work for Tindal (doing stuff for hazardous areas, like fuel systems, LDBO etc), and I have to say, I keep thinking about you when I do it – all those acronyms!!! One day I might figure them all out…… nah, probably not LOL!!! It’s really testing my knowledge – aircraft facilities are a bit different to the usual heavy industry that I’m used to! But the challenge has been great, really enjoying it. Have to admit to being part of some of this work is rather cool. I do get a bit of a buzz seeing some of the aircraft around here!

Great to see you back blogging. Once I get myself settled a little (hopefully this week, all our stuff arrives Wednesday), I’ll probably regain the urge to do same. At the moment feeling a little too rattled most of the time trying to organise stuff with the move, new role, etc. It’ll come together eventually, but this interim period is really trying at times!

Hi Carolyn. Boy haven’t you been on a big adventure of late. I can certainly appreciate what it’s like to move interstate, always challenging. LOL!! Yes acronyms, they’re a nightmare in the beginning but when you’re learning them it’s almost like learning a second language. Working around jets is always exciting, so different to anything else. I actually miss them, I never got sick of them or the noise for that matter. LOL!!
